This typical Piedmont sweet has a delightful aroma of honey and is finished with a coating of dark chocolate, ensuring the perfect balance of sweetness. This nougat is truly an experience to be savoured.
Made using traditional methods and an original recipe dating back to 1883. The nougat (called 'torrone') is uncoated, worked by hand rather than a machine, and is made using fresh egg whites, Piedmont hazelnuts (IGP) and a particular Piedmont clear colored “Millefiori” honey.
The nougat itself is steamed for seven hours, removed with wooden paddles to retain the heat and shaped by hand into beech moulds. It is then cut and placed on marble tables to cool for at least a day. The steam process does not affect the taste of the honey and gives its unique ‘crumbly’ texture. Once cooled, the nougat is coated in rich dark chocolate.
In the 1700s, a pastry chef from Asti, just outside of Turin, developed the recipe for a distinctive ‘crumbly’ nougat using Piedmont’s unique local ingredients. That recipe and methodology is still used today. The same family-run manufacturer of this famed nougat today has won the Local Denomination of Origin certificate as a mark of quality and authenticity.
